The Twelve Cookies of Christmas: Cherry Nut Slices

Generally a post about a cookie shouldn’t make me teary-eyed.  But this one does.  When I started my 12 Cookies of Christmas series last year, I knew instantly what my final installment would be.  It would be a tribute to my amazing mother-in-law Audrey.


Isn’t it wonderful, the memories that simple combination of sugar & butter can create?  I was fortunate this year that I could bake a vast assortment of Christmas cookie flavors, textures and colors.  But I can assure you if I only had time for a single batch of a single cookie, it would certainly be Cherry Nut Slices.


Now more than ever, it just would NOT be Christmas for me if I didn’t bake, eat, and share these with family and friends.  Somehow I feel like Mom is with me in the kitchen when I’m making these.  I hope that you and your family enjoy some (or all!) of my recipes from the series, especially these:


Audrey Fischer’s Cherry Nut Slices


1¾ c. sifted flour

½ tsp. salt

½ tsp. cinnamon

¼ tsp. baking soda

¾ c. butter

½ c. firmly packed brown sugar

½ tsp. vanilla

2 Tbsp. milk

1 c. candied cherries, cut in half (1 - 8 oz. container)

½ c. each walnuts and pecans


In a medium bowl, sift flour with salt, cinnamon, and baking soda.  Cream butter and add brown sugar, vanilla, and milk.  Blend well.  Gradually stir in dry ingredients.  Mix in cherries and nuts.


Shape dough in to rolls about 1½ inches in diameter.  (If you make logs that are approximately 12 inches long, you’ll get about four of them.)  Chill 4 – 6 hours, or overnight.  Cut in to ¼ inch slices.


NOTE:  To avoid a flat edge while the dough chills in the refrigerator, place the logs in a drinking glass and lay it on its side.


Place on ungreased cookie sheet, bake at 350º for 10 – 12 minutes.


In honor of Audrey’s memory my beverage pairings are a little different this time.  Because I know what SHE would recommend:


Coffee:  pure, plain, simple, unadorned by flavor.  Brand of choice?  This easy-to-find staple.


Tea:  See above description of coffee.  Another staple.


Either hot beverage can be enjoyed with this original.


No fancy-schmancy syrups for Mom.  Nope.  She was an old-fashioned, no-nonsense coffee and tea purist.


Her celebratory, holiday, and family get-together cocktail choice?  For mom, there was only one.  True to her Irish heritage she wanted this, and only this, straight up.
