Gingerbread Cookie Bites


I love all things gingerbread.  The very best I’ve ever eaten was a gingerbread shingle.  Seriously – a shingle.  Not just any shingle mind you, but a chocolate-covered one created by those talented pastry chefs at Walt Disney World for the Grand Floridian Resort and Spa.  In a word, amazing.


In the past I’ve recreated a similar confection, using a traditional cut-out gingerbread cookie and coating one side of it with chocolate.  Delicious but time consuming for sure.


Then, I discovered an easier approach:  Gingerbread Bites.  You can follow the recipe and instructions provided for cookie kebabs.  Or you can take the truly easy way out:  cut them into squares, diamonds or triangles and just before serving sprinkle with confectioner’s sugar.


Several options for coffee, tea, and cocktails exist.  Try one and you won’t be disappointed!
